Oil reserves are unevenly distributed in the tissues of oilseeds. Most of the oil is concentrated in the seed core, while the fruit and seed shells contain a relatively small amount of oil with a different lipid and fatty acid composition. In this regard, when processing oilseeds, it is advisable to pre-separate low-oil fruit and seed shells from the kernel.
